Alambika is proud to present its latest collaboration: IMMATURE, NATURAL VERJUS! Made locally from hybrid grapes bred for the Canadian climate.
IMMATURE grapes are carefully picked in August when their acidity approaches Ph of 2.7 to 2.8. This is the sweet (yet not sweet!) spot for use as a fresh, local alternative to lemon and lime.
Every year in September, there will be a new release. You can expect slight variations in color depending on the vintage. Verjus is a tart, acidic juice made from unripe grapes. It’s often used in cooking and salad dressings as a tangy alternative to vinegar or lemon juice.
The flavor is milder than that of mature wine grapes, adding a subtle acidity to dishes without overwhelming them. However, we created that Verjus for cocktail and beverages and it sure can enhance flavors in various recipes.
Here are different uses in cocktails:
Sour Substitute: It can replace citrus juices in sour cocktails, providing a softer, more complex acidity.
Savory Cocktails: Its earthy notes work well in savory drinks, like those featuring herbs or spices, enhancing flavors without overpowering them.
Spritzers: Mixed with sparkling water or wine, verjus creates a refreshing spritzer that's light and flavorful.
Vinaigrette Cocktails: Some mixologists use verjus in cocktails that mimic salad dressings, combining it with oils, herbs, and spirits.

Purchases under $125 are shipped across Canada at a low flat rate cost of only $12,95. Note that the conditions stated above apply to all locations that can be reached by normal land mail.
Before shipping, each glass and item is carefully and individually checked to be sure that everything is in perfect condition. Glasses are then protected with bubble wrap and other shock absorbing products.
Unless otherwise specified, all our shipping is done using the Accelerated parcel service from Canada Post.
Please be aware that some items cannot be shipped during winter months. That includes non-alcoholic beverages and spirits. Since those products don't contain alcohol, sugar or salt, the bottles freeze and have a high chance of exploding during transportation. We apologize for the inconvenience.
