Our story with NOA

NOA was born at Monsieur Cocktail, the house founded by Patrice Plante, who has been a chef, a critic, a bartender and an entrepreneur. His idea: don't just take the alcohol out of a cocktail, keep the whole experience. The bitterness, the length, the balance.

That is exactly what we were looking for. At Alambika, we want alcohol-free menus as serious as any other, and that takes bases you measure just like the real thing. The Italian Bitter makes a convincing alcohol-free Negroni with the Red Vermouth, the Italian Aperitif rebuilds the Spritz, the Amaro is sipped on ice after dinner.
