Our story with Immature

For years, we carried Au Fil du Vent verjus. When the couple retired and stopped production in 2023, we needed what came next. We went to a family of vine growers ready to pick for us.

IMMATURE is made from hybrid grape varieties bred for the Canadian climate. The grapes are picked in August, still green, when their acidity reaches a pH of 2.7 to 2.8: the sweet spot for replacing lemon or lime. Nothing is added. From one year to the next, the colour varies slightly with the vintage.

We designed it for the bar first: a rounder sour, a light spritz, a savoury herbal cocktail. The label and the « Stupid Rabbit » on the back are by our friend Max Coubès, bartender and artist, co-founder of Bar Le Crocodile.

Frequently asked questions

What is verjus?

A tart juice pressed from unripe grapes. It brings a softer, more vinous acidity than citrus.

How do I use it in a cocktail?

In place of lemon or lime juice in a sour, or topped with sparkling water for a light spritz. It pairs well with herbs and spices.

Does verjus contain alcohol?

No. It is unfermented grape juice.

Do you ship verjus in winter?

During the coldest months, we pause shipping bottles that could freeze. It stays available in store.
